Real Food Challenge: Day One

Yesterday was my first day on this real food challenge journey.  I would say it was a success, but, I was also very excited to start.  We will see how I feel come the weekend!  Here is what I had:

Breakfast: 
2 eggs scrambled
1 piece of 100% whole wheat toast
1 banana
1 cup of 100% orange juice

Ideally, I would eventually like to get to where I just have egg whites.  Being someone who now has higher blood pressure, I don't need  the cholesterol from those egg yolks!  I also bought ingredients to make smoothies, I would prefer to make these in the morning but I seem to have ZERO time.  But, it was only day one, can't do everything right away!

Lunch:
Individual pizza (100% whole wheat tortilla, olive oil, spinach, roma tomatoes, boneless/skinless chicken, handful of mozzarella cheese, and parsley for seasoning)
Spinach salad w/carrots, cherry tomatoes, cucumbers, and sliced almonds with homemade poppy seed dressing (the dressing did have artificial sweetener, but, I was out of options and I am addicted to this dressing)
Water to drink

Snack:
Dried fruit (pineapple and banana)

Dinner:
Whole wheat macaroni and cheese,  Click here for recipe
Sauteed squash and zucchini w/sliced almonds
100% cranberry peach juice

Overall, it wasn't bad.  However, looking back, I noticed I need more fruit.  I love fruit, but, I hate eating cold things.  So, this is a constant struggle.  Hopefully I can make these smoothies and get some fruit in my diet :)  Also, I have the biggest sweet tooth and I would be lying if I didn't say that I craved chocolate yesterday!

  1. Side note from husband, the macaroni was dank, especially with some Frank's Hot Sauce!
