Real Food Challenge: Days Two and Three!
Can I get an AMEN?!
Oh, man! This is not as easy as I thought it would be, but, I am not giving up! Day two was successful, I didn't cheat. I can't lie though, I would have LOVED to have had a soda or some chocolate. Just a little wouldn't hurt, right?
My meals on day two were very similar to day one. I am someone who works best when things are consistent, I tend to stick to it better. I think I get this from my mom. She eats a whole wheat bagel with smooth peanut butter (on the side) EVERY day for lunch. She never gets sick of it. Same with me. I don't need much variation, I know, I am boring. But what can I say? When I find something I like, I am content eating just that, day in and day out. So, day two was exactly like day one, except for dinner. For dinner we made parmesan crusted chicken, roasted potatoes, and spinach salad. YUM! It was all yummy!!
Day three, I have to admit, I cheated. I thought I would feel guilty, but, I don't. I caved and drank a soda, I just couldn't help it. Sigh. Breakfast and lunch were the same as day one and day two, go figure. Consistency, my best friend. For dinner though, we made chicken nuggets! Not quite as yummy as Chic-fil-a but still tasty. Click here for recipe. As a side, I made a black bean and corn salad. To be honest, I just made up my own recipe with the help of my mom and it included: black beans, corn, red peppers, green peppers, cilantro, olive oil, pepper, parsley, and I topped it with grated parmesan cheese and baked it until the cheese melted. It was okay but I felt it was missing something. I will have to perfect this someday, in the meantime, I will just make my momma make it :) She makes a great black bean and corn salad!
Today is day four. So far, so good! Guess what I had for breakfast?!? The same thing I had on day 1, day 2, and day 3. And you know what, I am still loving it!
